Obviously understanding why and how fraud happens is important, but testing can be a valuable tool as well.
Unfortunately food is incredibly complex and the means of ensuring its authenticity is equally complex. Terms such as New Genome Sequencing, Rapid Evaporative Ionization Mass Spectrometry, Principal Component Analysis and Nuclear magnetic resonance are used with ease by food chemists and the costs of testing are often greater than the risk to the product. But does it have to be this way?
