When we start working with a new client, one of the first questions they often ask is what is the most appropriate microbiological specification I need to request for my product?
The term “specification” is normally regarded as the list of tests which are considered to be appropriate for a particular food type. The applied criteria are the acceptable levels for the organism listed in the specification.
Deciding on what tests are appropriate and what levels of organisms are acceptable can be quite difficult and problematic and can only be achieved by applying a full microbiological risk assessment to each product. This enables the microbiological risks to be identified so that the relevant tests can be applied.
The application of the incorrect microbiological specification can be a big drain on testing budgets as money is not only spent on irrelevant testing but often time and effort can be wasted on investigating “out of specification” results which may have no impact on product quality or food safety.
