ALS announces new UKAS accredited method: temperature measurement
for cooking instructions

ALS in Rotherham, UK has been granted United Kingdom Accreditation Service (UKAS) accreditation for 'Temperature measurement over a specified time period for the generation and/or validation of cooking instructions using domestic appliances'.

ALS offers both the generation of new ­− ­and verification of current − back-of-package cooking instructions, to ensure a safe and ready-to-eat product is consistently produced. Trials are conducted by ALS’ experienced technical services team to determine the optimum time/temperature combinations regarding the safety and quality attributes of cooked products.

‘As an already trusted and recognized lab group, receiving UKAS accreditation for our temperature testing methods offers reassurance to our clients,’ says Rachel McGrath, Technical Services Manager for Food and Pharmaceuticals at ALS.

The ALS technical services laboratory houses a purpose-built kitchen equipped with a range of appliances for performing cooking validation trials including:

  • Gas and electric ovens
  • Induction hobs
  • Microwaves
  • Deep fat fryers
  • Air fryers
  • Grills
